Whatchamacallit Peanut Butter Bars

Have you ever had a Whatchamacallit candy bar?? They are my favorite but are usually overshadowed by the more popular Reese’s, Kit Kats and Twix. That’s a shame. These bars totally taste like a Whatchamacallit bar, but better (and they’re gluten-free). With their peanut butter rice crispy base, and layers of caramel and chocolate, these are one of the best desserts I have ever eaten.

I wasn’t trying to create an exact duplicate of Whatchamacallit bars, but they were my inspiration.  These are perfect for when you have an unfinished box of rice crispy cereal in the back of the pantry but there isn’t quite enough left for rice crispy treats.  I intended to make these as a treat for my husband, who can’t eat the candy bars, as they aren’t gluten-free, but they were so good that we were fighting over these until there was nothing left but crumbs. Whoops!

Speaking of my husband, I am too lazy to continue typing “my husband” when I refer to him, so I am going to call him “BC” from now on.  Back when we were just dating, my roommate and I used to call him BC.  

Anyway, BC and I celebrated our 2 year wedding anniversary this past weekend!  What do you guys do to celebrate anniversaries? I think we are going to try to do something different every year.

This year we both wanted something pretty low-key.  He took the day (Monday) off work and we went to breakfast at our favorite local spot called Stack’s Pancake House

This is  Cap’n Crunch Macadamia Nut French Toast…yummmmm!

After breakfast we went to the beach. It was so nice to go on  a Monday, when its easy to find parking and there aren’t many people there.

I can’t believe this beach is just 20 minutes away from our house.

Instead of doing a fancy dinner that night, we saw Jurassic World and had Buffalo wings for dinner. It was perfect! I only wish I had made a pan of these bars to finish off the night.

Ok, back to the bars! They are super simple to make. I happened to have everything I needed already in my pantry.

Instead of making the base more like a rice crispy treat, I decided to make it more like a peanut butter ball with rice crispy cereal added. Try to stop yourself from eating little pinches of this while you’re pressing it into the pan! I dare you!

Then, on go the caramel and chocolate layers!

I used Candiquick because I thought it would taste more like a candy bar than melted chocolate (and also because I happened to have a big chunk of it sitting in my pantry…)

And that’s it! If you used Candiquick, like I did, it will set up pretty quickly!

Inspired by the Whatchamacalit candy bar, these tasty treats have a peanut butter crispy rice cereal base, with layers of creamy caramel and chocolate.

Ingredients
  1. 1 cup creamy peanut butter (256 g)
  2. 1/4 cup butter, melted
  3. 1 1/2 cup powdered sugar (180 g)
  4. 2 cups crispy rice cereal (use gluten-free, if desired)
  5. 24 caramel squares, unwrapped (about 6 oz)
  6. 1 tbsp milk or cream
  7. 7 oz Chocolate Candiquik or chocolate chips
Instructions
  1. Stir peanut butter and butter together in a large bowl until smooth.
  2. Mix in powdered sugar until well combined. Mixture will be lumpy.
  3. Gently fold in cereal until incorporated. Press and pack mixture into 8x8 pan.
  4. Over low heat, continuously stir together milk and caramel squares until smooth. Pour over peanut butter cereal mixture until even.
  5. Melt Candiquik and pour over caramel. Mixture will be set in 1-2 hours.
  6. Cut into squares and serve.

  1. 20 minutes from the beach!! So jealous!
    Actually, I live 15 minute walk from the beach…but I have never seen anyone swimming there. It’s a good beach to suntan and play beach volleyball though.
    Also, I am pretty sure I want to make these as soon as humanly possible. Bookmarked!!
