No-Bake Chocolate Peanut Butter Oat Bars

Over the years, I have always made those classic chocolate peanut butter oat no-bake cookies anytime I am short on time and need a dessert for a crowd, or just feeling lazy and want something sweet, or when it’s summer (or spring, or fall, or winter….) and I don’t want to turn on the oven, or when I’m staring into an almost-empty pantry, you get the point. These bars are basically those impossibly easy cookies actually made easier and gluten-free, too!

No-bake cookies are certainly not fancy or original, but they have remained one of my favorites treats over the years. My mom has been making no-bakes for as long as I can remember and I have continued to do so as I have grown up; I don’t know why it took me so long to make these into bar form!  This recipe makes a small batch, but I often double it when expecting a crowd.

These bars are really tough to screw up, you just add the butter, sugar, milk, cocoa powder, and salt to a saucepan and boil for a minute…

Then mix in your peanut butter and vanilla until smooth, and stir in those oats!

With this version, you just press the mixture into a parchment paper lined baking dish and then comes the hard part…waiting for it to cool!

I love to add a bit of powdered sugar to the bars once they have cooled.

  1. Chocolate no-bake cookies are my dad’s all time fave, I always make a batch for his birthday and for Father’s Day! It’s a super easy gift for the man who really needs nothing! I’m impressed with your thought to put these in a bar form. I think it makes them look much more appealing :).

  2. Hello!! I’m so glad I stumbled upon your blog today – I love finding other CA food bloggers who boomeranged back to the west coast :). These look delicious. I am a huge fan of no bake treats! Unfortunately that means I leave them in the freezer and just pick at them constantly…
