Sixlet Butterscotch Pudding Cookies

I will never get tired of classic chocolate chip cookies.  However, it’s fun to switch it up every once in awhile, right?  The dough for these cookies is made with butterscotch pudding which keeps them soft and adds a subtle but yummy hint of butterscotch.  Obviously there are chocolate chips (mini chips, as to not overwhelm the other flavors), but the really fun part is the Sixlet candies, which add a nice crunch and an almost malty flavor.

Pie! Everybody loves pie, right? Pudding pies are some of my favorite to make (like this one). They can be whipped up quickly with a box of pudding mix, or you can take your time and make pudding from scratch. The crust here is what really stands out, though.  The crust is essentially just the same coconut macaroon recipe used to make cookies.  I love coming up with fun and delicious gluten-free pie crusts. This one is no exception!

Have you ever had a Whatchamacallit candy bar?? They are my favorite but are usually overshadowed by the more popular Reese’s, Kit Kats and Twix. That’s a shame. These bars totally taste like a Whatchamacallit bar, but better (and they’re gluten-free). With their peanut butter rice crispy base, and layers of caramel and chocolate, these are one of the best desserts I have ever eaten.
