Spaghetti Squash and Turkey Italian Meatballs

I’ve found my new favorite fall meal. It’s pretty healthy but feels so so indulgent.  Roasted spaghetti squash is topped with Italian turkey meatballs, marinara sauce, shredded parmesan cheese, and fresh basil leaves. Fall and winter squash season is here (I can’t wait to make this soup again) and I am so happy about it! This title is a mouthful, I know…and can you believe I left out a few descriptors I wanted to add ?? The humble grilled zucchini did not make it into the title, neither did the ‘Greek’ in Greek yogurt, and that beautiful green baby spinach, I also left out ‘amazing’, ‘delicious’, ‘super easy’, and ‘healthy’! Confession: I have been kebabing everything I can get my hands on this summer; chicken, onions, veggies, and even random leftover cloves of garlic. I made these chicken skewers two weeks in a row. They are slathered in a balsamic honey sauce and grilled to perfection.  The honey creates a caramelized crust on the chicken that melts in your mouth.  The onions and zucchini wedged in between the chicken make these skewers a tasty dinner you’ll never want to stop eating.

Crockpot (I know crockpot is a brand, but ‘slow cooker’ chicken just doesn’t have the same ring to it!) meals usually are not the prettiest.  But if you need an easy, healthy, flavorful weeknight meal, this chicken fits the bill.  It’s also likely you already have all of the ingredients needed for this recipe already in your kitchen. Balsamic vinegar, lots of herbs, sliced onions, and juicy diced tomatoes cook together for hours to infuse this shredded chicken with lots of flavor–you can eat it on its own, spoon it over rice or pasta or a salad, or make it into wraps.

Chicken Taco Sweet Potato Skins

 These potato skins are packed full of flavor and still manage to be pretty healthy.  They combine lots of ingredients you would expect to find in a taco with the heavenly warmth of baked sweet potatoes.  The tomatoes with green chiles and salsa verde really pack a tasty punch. Also, anything I’m allowed to top with sour cream and cheese is okay by me. After just a few bites in, they were already becoming one of my favorite weeknight meals!
