Bacon Ranch Green Chile Dip (plus a few more game day recipes)

This is one of the best dips I have ever had.  And it is SUPER easy.  Sour cream, a ranch mix packet, some bacon, pepper jack cheese, and a small can of diced green chiles are all you need.  It’s perfect if you haven’t had time to think of something to bring to your Super Bowl parties this Sunday.  It’s also perfect if you already have everything planned out because you NEED this dip in your life.

In fact, my husband and I needed this dip in our life so much that we ate it BY OURSELVES in 2 days the first time I made it.  Whoops! I’d like to blame my husband for eating the lion’s share but I can’t be sure, though…it all happened so fast.


Anyway, am I the only one who fills up on a dip at every single party I go to?  I never seem to have room for the main meal, but I never seem to mind too much!  I love the standard ranch dip made with sour cream but once you add cheese and bacon, it can’t be beaten!  The green chiles also add lots of flavor without being too spicy to taste everything else.

What is your Super Bowl plans?  Last year we hosted a little party, but I am not feeling too excited for the game this year because the Patriots are my husband’s team’s nemesis (he likes the Giants) and I’m not a big fan of the Seahawks.  It’s ok though, I’ll be the one in the kitchen with my head in a bowl of dip.

How do you guys like to cook bacon? I like to bake it in my oven.  I just plop the slices onto a foil-lined baking sheet, put it into a cold oven, set the temperature to 400 degrees, and come back 17-19 minutes later to perfectly crispy bacon.

  1. 16 oz sour cream
  2. 1 packet ranch dip mix (1 oz)
  3. 1 cup pepper jack cheese (4 oz), grated
  4. 4 slices bacon (4 oz), cooked and crumbled
  5. 1 can dice green chiles (4 oz), drained
  1. Put bacon, cheese, ranch mix, sour cream, and chiles into a small bowl and stir to combine. The dip is best after chilling for at least 4 hours.
