Dark Chocolate Triple Mint Cookies

Dark Chocolate Triple Mint Cookies

These chocolate mint cookies have been (literally) starring in my dreams for weeks now!  They have three (!!) different kinds of minty chocolate chips in them and lots of dark cocoa powder.  They would be a great addition to any Christmas party dessert table.  Or you can make them every month all year round, as I am desperately tempted to do…

Sixlet Butterscotch Pudding Cookies

Sixlet Butterscotch Pudding Cookies

I will never get tired of classic chocolate chip cookies.  However, it’s fun to switch it up every once in awhile, right?  The dough for these cookies is made with butterscotch pudding which keeps them soft and adds a subtle but yummy hint of butterscotch.  Obviously there are chocolate chips (mini chips, as to not overwhelm the other flavors), but the really fun part is the Sixlet candies, which add a nice crunch and an almost malty flavor.

No-Bake Chocolate Peanut Butter Oat Bars

No-Bake Chocolate Peanut Butter Oat Bars

Over the years, I have always made those classic chocolate peanut butter oat no-bake cookies anytime I am short on time and need a dessert for a crowd, or just feeling lazy and want something sweet, or when it’s summer (or spring, or fall, or winter….) and I don’t want to turn on the oven, or when I’m staring into an almost-empty pantry, you get the point. These bars are basically those impossibly easy cookies actually made easier and gluten-free, too!

Thin & Crispy Chocolate Chip Cookie S'mores

Forgive me…this isn’t a real recipe, but rather an amazing and gluttonous discovery.  Who doesn’t love s’mores? Who doesn’t love chocolate chip cookies? Some of them have traditional milk chocolate and some of them have Reese’s peanut butter cups because who needs bikinis anyways, right?

Whatchamacallit Peanut Butter Bars

Whatchamacallit Peanut Butter Bars

Have you ever had a Whatchamacallit candy bar?? They are my favorite but are usually overshadowed by the more popular Reese’s, Kit Kats and Twix. That’s a shame. These bars totally taste like a Whatchamacallit bar, but better (and they’re gluten-free). With their peanut butter rice crispy base, and layers of caramel and chocolate, these are one of the best desserts I have ever eaten.

Chocolate Pudding Pie with Pretzel Crust and Peanut Butter Whipped Cream

Chocolate Pudding Pie with Pretzel Crust and Peanut Butter Whipped Cream

Ok, I missed Pi day last week but it’s not too late to make pie, right? This pie is a life-changer. The salty-sweet crunchy pretzel crust is the base of a chocolate pudding pie topped with homemade light and fluffy peanut butter whipped cream.  The idea for this pie came to me in a dream (I know…ridiculous..) and I have a feeling I’ll be dreaming about it a lot more now that I’ve actually made and eaten it!

Quadruple Chocolate Puppy Chow

Quadruple Chocolate Puppy Chow

Puppy chow (or muddy buddies) is a pretty awesome dessert made by covering Chex cereal in chocolate, butter, and peanut butter, and then powdered sugar. They are stupidly easy to make and so addictive! The original recipe is delicious, but this version starts with Chocolate Chex instead of plain Chex, has more chocolate (obviously), and cocoa powder mixed in with the powdered sugar. Of course, I also brought back the Dark Chocolate M&Ms for an added crunch.  This isn’t the prettiest dessert ever, but it won’t matter when you realize you have eaten it all before anyone else even gets to see it.
