Confession: I have been kebabing everything I can get my hands on this summer; chicken, onions, veggies, and even random leftover cloves of garlic. I made these chicken skewers two weeks in a row. They are slathered in a balsamic honey sauce and grilled to perfection. The honey creates a caramelized crust on the chicken that melts in your mouth. The onions and zucchini wedged in between the chicken make these skewers a tasty dinner you’ll never want to stop eating.
Crockpot (I know crockpot is a brand, but ‘slow cooker’ chicken just doesn’t have the same ring to it!) meals usually are not the prettiest. But if you need an easy, healthy, flavorful weeknight meal, this chicken fits the bill. It’s also likely you already have all of the ingredients needed for this recipe already in your kitchen. Balsamic vinegar, lots of herbs, sliced onions, and juicy diced tomatoes cook together for hours to infuse this shredded chicken with lots of flavor–you can eat it on its own, spoon it over rice or pasta or a salad, or make it into wraps.
I know, I know, gone for a month and my first recipe back is VEGETABLES? How dare I? These are so delightful, though, that you won’t even mind that they are good for you. This chicken is heavenly. It’s somehow both rich and light and full of flavor. My husband said that this chicken made him “reevaluate his life”. I’m not entirely sure what he meant, but I’m 99% sure it was a good thing. Crispy brown skin, tons of lemony juice, and tenderly moist meat make this one of my favorite (and super easy) weeknight meals.
If you don’t like mustard, you should skip this recipe. Though, I guess since mustard is in the title, you probably don’t need the additional warning. I love the tangy, vinegary taste and happen to have at least three kinds of mustard in my refrigerator at all times. I have been making a variation of this chicken for a couple of years now whenever I am craving a light, flavorful meal.
