This title is a mouthful, I know…and can you believe I left out a few descriptors I wanted to add ?? The humble grilled zucchini did not make it into the title, neither did the ‘Greek’ in Greek yogurt, and that beautiful green baby spinach, I also left out ‘amazing’, ‘delicious’, ‘super easy’, and ‘healthy’! It’s summer, I don’t want to go near my oven, and I love going outside and smelling dinner on the grill. That means lots of grilled chicken for weeknight meals. It also means lots of easy it’s-too-hot-to-cook salads. This might be my favorite salad ever. It has grilled chicken, grilled sliced red onions, juicy tomatoes, kalamata olives, feta, cucumbers, and a super easy homemade tzatziki sauce.
Sometimes I’m in the mood for a salad but I want something a little bit carb-y with it. Other times I want enchiladas, but don’t necessarily want the beans and rice that come with them. Cheesy, saucy enchiladas are high up there on my list of favorite Mexican foods. I like to tell myself that putting them atop a salad makes them a little bit healthier. This salad is the perfect mix of naughty and nice.
I’ve made it my goal this summer to create the most flavorful salads I could possibly dream of—to make salad-haters turn over a new leaf (yep, pun dorkily intended). This salad accomplishes that task perfectly. There is so much flavor here your taste buds just might explode—chicken fajitas with sauteed onions and bell peppers, roasted sweet potato chunks, and dressing made with jalapeño AND blue cheese. This is not the easiest salad you will ever make, but it is so (SO) worth it. Read more
Southern California is pretty warm all year but, as we approach the end of June, the heat is becoming more intense and consistent! There’s something about the warmer weather that makes me crave salads with fresh flavors and bright, juicy tomatoes.
