Cheese Enchilada Salad with Creamy Cilantro Dressing

Sometimes I’m in the mood for a salad but I want something a little bit carb-y with it. Other times I want enchiladas, but don’t necessarily want the beans and rice that come with them. I am ashamed to say that I had never made corn tortillas until a few months ago. To be honest, corn tortillas are usually fine but I would rather eat flour tortillas; corn tortillas can sometimes be dry and bland. I have typically seen them as just a vehicle for taco filling or as something to be cut and fried into chips. Homemade corn tortillas don’t even feel like the same food. I ate more than a few of them warm from the griddle with just a sprinkle of salt or a splash of salsa.

Quadruple Chocolate Puppy Chow

Puppy chow (or muddy buddies) is a pretty awesome dessert made by covering Chex cereal in chocolate, butter, and peanut butter, and then powdered sugar. They are stupidly easy to make and so addictive! The original recipe is delicious, but this version starts with Chocolate Chex instead of plain Chex, has more chocolate (obviously), and cocoa powder mixed in with the powdered sugar. Of course, I also brought back the Dark Chocolate M&Ms for an added crunch.  This isn’t the prettiest dessert ever, but it won’t matter when you realize you have eaten it all before anyone else even gets to see it.

Grilled Avocado Smoky Chipotle Guacamole

This is a pretty traditional guacamole recipe with a smoky twist. You get that smoky flavor from the slightly charred avocados, smoked paprika, and chipotle pepper. I like regular guacamole, but I LOVE this one.
