Chicken Fajita and Roasted Sweet Potato SaladI’ve made it my goal this summer to create the most flavorful salads I could possibly dream of—to make salad-haters turn over a new leaf (yep, pun dorkily intended).  This salad accomplishes that task perfectly. There is so much flavor here your taste buds just might explode—chicken fajitas with sauteed onions and bell peppers, roasted sweet potato chunks, and dressing made with jalapeño AND blue cheese. Chocolate Toffee Coconut Macaroons

Coconut macaroons are one of the easiest cookies I’ve ever made (and they just happen to be gluten-free). These are the perfect cookies to make if you have a random bag of flaked coconut sitting in your fridge like I pretty much always do. The buttery caramel flavor from the toffee bits complements the toasty coconut really well. My husband ate all of these in two days. Read more

I can’t go the whole summer without s’mores. I made a s’more on my gas stove the other day (do you guys do that?) and it was great. However, I found myself with a lot of extra graham crackers and I seem to have a limit on how many stove s’mores I can eat before I get sick of them! One thing I pretty much never get sick of, though, is cookies. With this in mind, I set out to create the most decadent s’mores cookie I could imagine. Obviously this meant adding Biscoff. Read more
