Toffee Peanut Butter(scotch) Pudding Cookies

It’s almost Christmas and I have been taking advantage of this excuse to bake (and eat…) cookies any chance I can get! These cookies aren’t your traditional Christmas cookie in any way, but they just might have to become an annual tradition in my home.  They start with a butterscotch pudding dough and are loaded with milk chocolate toffee bits and peanut butter chips.

Crockpot Kalua Pork SlidersLet’s talk about sandwiches. What’s your favorite kind?  I’m a big fan of anything super cheesy (grilled cheese sandwiches are high on my list) on a good bread. This sandwich has moved to the top of my list, too.  It has this smoky kalua pork, Monterey jack cheese , an easy BBQ spread, and lots of caramelized onions—all atop a sweet Hawaiian bun.

Italian Sausage and Bell Pepper Soup with Rice

It finally feels like fall in southern California.  That means cooler temperatures, rainy days, and soup! With the addition of Italian chicken sausage and a little bit of rice, this soup is warm and comforting but manages to be healthy, too.  It’s the perfect dinner to make after indulging on rich, heavy foods at Thanksgiving (and again and again with leftovers for days afterwards)!
