I’m sorry for this post. This butter is about to become your new favorite addiction (it’s definitely mine!) We can all blame my friend Olivia, who evilly introduced me to this at the party we threw for our friend’s birthday last month. I’m pretty sure I saw some people eating it straight out of their spoons. She found it at Costco, but I had all of the ingredients in my kitchen, so I figured “why not?”
The butter from Costco was vanilla bean honey butter but I didn’t have any vanilla beans and needed this NOW so I just decided to use vanilla extract. I made a batch of gluten-free cornbread (Bob’s Red Mill is my favorite) along with some chili for dinner just so that I wouldn’t be eating a dinner solely comprised of butter and sugar.
I used pre-whipped butter that I left out on the counter for a couple of hours, added the vanilla and honey, and used a hand mixer for a couple of minutes, and that was it. If you don’t have whipped butter, you can add a couple of tablespoons of milk to a stick of butter and whip it until light and fluffy.
- 4 oz whipped salted butter, room temperature
- 3 tbsp honey (64 g)
- 1/3 tsp vanilla extract
- With a hand mixer, whip butter, honey, and vanilla extract until fluffy.
