No-Bake Chocolate Peanut Butter Oat Bars

Over the years, I have always made those classic chocolate peanut butter oat no-bake cookies anytime I am short on time and need a dessert for a crowd, or just feeling lazy and want something sweet, or when it’s summer (or spring, or fall, or winter….) and I don’t want to turn on the oven, or when I’m staring into an almost-empty pantry,you get the point. These bars are basically those impossibly easy cookies actually made easier and gluten-free, too!

No-bake cookies are certainly not fancy or original, but they have remained one of my favorites treats over the years. My mom has been making no-bakes for as long as I can remember and I have continued to do so as I have grown up; I don’t know why it took me so long to make these into bar form!  This recipe makes a small batch, but I often double it when expecting a crowd.

These bars are really tough to screw up, you just add the butter, sugar, milk, cocoa powder, and salt to a saucepan and boil for a minute…

Then mix in your peanut butter and vanilla until smooth, and stir in those oats!

With this version, you just press the mixture into a parchment paper lined baking dish and then comes the hard part…waiting for it to cool!

I love to add a bit of powdered sugar to the bars once they have cooled.

Classic chocolate peanut butter no-bake cookies made into gluten-free bars

  1. 1/4 cup unsalted butter
  2. 3/4 cup (144 g) granulated sugar
  3. 1/4 cup milk
  4. 2 tbsp (10 g) unsweetened cocoa powder
  5. Pinch kosher salt
  6. 1/2 cup peanut butter (128 g)
  7. 1/2 tsp vanilla extract
  8. 1 1/2 cups quick-cooking oats, gluten-free , if desired (144 g)
  9. Powdered sugar, for dusting (optional)
  1. Add butter, sugar, milk, cocoa powder, and salt to a saucepan.
  2. Bring to a rolling boil and let boil for 1 minute.
  3. Remove from heat and mix in peanut butter and vanilla extract until smooth, then stir in oats.
  4. Press mixture into 8x8 baking dish lined with parchment paper.
  5. Let cool until set, and sprinkle with powdered sugar, if desired.
  1. If you don’t have quick cooking oats, pulse whole rolled oats a couple of times in a food processor to make them ‘quick-cooking’

    Chocolate no-bake cookies are my dad’s all time fave, I always make a batch for his birthday and for Father’s Day! It’s a super easy gift for the man who really needs nothing! I’m impressed with your thought to put these in a bar form. I think it makes them look much more appealing :).
