Hopefully you aren’t tired of pumpkin yet, because these are definitely the best pumpkin cookies I have ever eaten and maybe even the best oatmeal cookies I have ever eaten (I am not exaggerating), and you don’t want to miss these! Soft and chewy oatmeal cookies made with gluten-free oat flour and whole rolled oats, subtly flavored with pumpkin, and studded with buttery caramel bits.
Have you ever had a Whatchamacallit candy bar?? They are my favorite but are usually overshadowed by the more popular Reese’s, Kit Kats and Twix. That’s a shame. These bars totally taste like a Whatchamacallit bar, but better (and they’re gluten-free). With their peanut butter rice crispy base, and layers of caramel and chocolate, these are one of the best desserts I have ever eaten.
These crispy treats were a big hit at a little BBQ my husband and I hosted at our house a couple of weekends ago. It’s probably because I have never met someone who doesn’t like rice crispy treats (I hope I never will!), and when you pair them with salted caramel and toasted marshmallows, they become dangerously addictive.
